Ingredients
Makes 4 servings
- 2 tablespoons olive oil
- 2 garlic cloves, finely chopped
- 1 medium bunch red chard, tough stems removed and coarsely chopped
- salt and freshly ground black pepper
- 1 1/2 cups cooked or 1 can white beans, drained and rinsed
- 1 1/2 cups ripe grape tomatoes, halved lengthwise
- 1 pound penne
- 2 tablespoons finely chopped fresh basil, for garnish
Method
- In a large saucepan, heat the oil over medium heat
- Add the garlic and cook until fragrant, about 30seconds
- Add the chard and season with salt and pepper to taste
- Cook, stirring, until wilted, about 3 minutes
- Add the beans and tomatoes, reduce heat to low and simmer for 10 minutes, stirring occasionally
- Taste, adjusting seasonings if necessary
- In a large pot of boiling salted water, cook the penne over medium-high heat, stirring occasionally, until al dente, about 10 minutes
- Drain well and transfer to a large serving bowl
- Add the sauce and toss gently to combine
- Sprinkle with basil and serve immediately
