Ingredients
Makes 4 servings
- 3 garlic cloves, minced
- 1/2 cup unsalted roasted peanuts
- 1 teaspoon sugar
- 1/4 cup soy sauce
- 1 tablespoon fresh lime juice
- 1/2 teaspoon Asian chili paste
- 1/4 cup creamy peanut butter
- 2 tablespoons toasted sesame oil
- 1 pound penne
- 1/4 cup chopped fresh cilantro, for garnish
- 2 tablespoons chopped green onions, for garnish
Method
- In a food processor, combine the garlic, peanuts and sugar and process to a paste
- Add the soy sauce, lime juice and chili paste and process until well blended
- Add the peanut butter and sesame oil and process until smooth
- Transfer to a small bowl and set aside
- In a large pot of boiling salted water, cook the penne over medium-high heat, stirring occasionally, until al dente, about 10 minutes
- Drain well, reserving 1/3 cup of the pasta water
- Transfer the pasta to a large serving bowl
- Add the reserved pasta water to the pesto, stirring to make a smooth sauce
- Add the sauce and toss gently to combine
- Garnish with cilantro and green onions and serve immediately
