Penne Pasta Smoked Salmon Cream Sauce Seafood Recipe

Ingredients

  • 1 can salmon — (14-3/4 oz.)
  • — drained and flaked
  • 1 pound penne pasta
  • 1 teaspoon liquid smoke
  • 1/2 cup white wine
  • 1 cup clam juice
  • 1 teaspoon garlic — minced
  • 1 shallot — minced
  • 3/4 cup evaporated skim milk
  • 1/2 tablespoon cornstarch
  • fresh dill — chopped, to taste
  • salt and pepper — to taste
  • olive oil cooking spray

Method

  1. Mix cornstarch with 2 tbsp of evaporated skim milk, hold aside
  2. Spray a saute pan with cooking spray, add garlic, dill, shallot and 2 tbsp of wine and cook for 2 minutes
  3. Add the clam juice, liquid smoke and 3/4 of the salmon; cook for 5 minutes
  4. Remove to a blender or food processor and process to your desired consistency
  5. Add the cooked pasta and toss; cook to heated through
  6. Taste, adding salt and pepper as needed
  7. Serve, garnished with additional dill
  8. Makes 6-8 servings
