Pecan-Lentil Burgers Recipe

Ingredients

Makes 4 to 6 burgers

  • 1 1/2 cups cooked brown lentils 1/2 cup ground pecans
  • 1/2 cup old-fashioned oats
  • 1/4 cup dry unseasoned bread crumbs
  • 1/4 cup wheat gluten flour (vital wheat gluten)
  • 1/2 cup minced onion
  • 1/4 cup minced fresh parsley
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 2 tablespoons olive oil
  • 4 to 6 burger rolls
  • lettuce leaves, sliced tomato, sliced red onion and condiments of choice

Method

  1. In a food processor, combine the lentils, pecans, oats, bread crumbs, flour, onion, parsley, mustard, salt and pepper
  2. Pulse to combine, leaving some texture
  3. Shape the lentil mixture into 4 to 6 burgers
  4. In a large skillet, heat the oil over medium heat
  5. Add the burgers and cook until golden brown, about 5 minutes per side
  6. Serve the burgers on the rolls with lettuce, tomato slices, onion and condiments of choice
