Pecan-Lentil Burgers Recipe
Ingredients
Makes 4 to 6 burgers
- 1 1/2 cups cooked brown lentils 1/2 cup ground pecans
- 1/2 cup old-fashioned oats
- 1/4 cup dry unseasoned bread crumbs
- 1/4 cup wheat gluten flour (vital wheat gluten)
- 1/2 cup minced onion
- 1/4 cup minced fresh parsley
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 2 tablespoons olive oil
- 4 to 6 burger rolls
- lettuce leaves, sliced tomato, sliced red onion and condiments of choice
Method
- In a food processor, combine the lentils, pecans, oats, bread crumbs, flour, onion, parsley, mustard, salt and pepper
- Pulse to combine, leaving some texture
- Shape the lentil mixture into 4 to 6 burgers
- In a large skillet, heat the oil over medium heat
- Add the burgers and cook until golden brown, about 5 minutes per side
- Serve the burgers on the rolls with lettuce, tomato slices, onion and condiments of choice
