Ingredients
Makes 4 servings
- 4 firm ripe pears, cored
- 1 tablespoon fresh lemon juice
- 1/2 cup finely chopped pecans
- 4 dates, pitted and chopped
- 1 tablespoon vegan margarine
- 1 tablespoon pure maple syrup
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- 1/2 cup pear, white grape, or apple juice
Method
- Preheat the oven to 350°F
- Grease a shallow baking dish and set aside
- Halve the pears lengthwise and use a melon baller to scoop out the cores
- Rub the exposed part of the pears with the lemon juice to avoid discoloration
- In a medium bowl, combine the pecans, dates, margarine, maple syrup, cinnamon and ginger and mix well
- Stuff the mixture into the centers of the pear halves and arrange them in the prepared baking pan
- Pour the juice over the pears
- Bake until tender, 30 to 40 minutes
- Serve warm
