Pecan Date-Stuffed Roasted Pears Recipe

Ingredients

Makes 4 servings

  • 4 firm ripe pears, cored
  • 1 tablespoon fresh lemon juice
  • 1/2 cup finely chopped pecans
  • 4 dates, pitted and chopped
  • 1 tablespoon vegan margarine
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1/2 cup pear, white grape, or apple juice

Method

  1. Preheat the oven to 350°F
  2. Grease a shallow baking dish and set aside
  3. Halve the pears lengthwise and use a melon baller to scoop out the cores
  4. Rub the exposed part of the pears with the lemon juice to avoid discoloration
  5. In a medium bowl, combine the pecans, dates, margarine, maple syrup, cinnamon and ginger and mix well
  6. Stuff the mixture into the centers of the pear halves and arrange them in the prepared baking pan
  7. Pour the juice over the pears
  8. Bake until tender, 30 to 40 minutes
  9. Serve warm
