Ingredients
SERVES 6 – Cooker: 5- to 7-quart – Time: 4 minutes at HIGH pressure
- 3 tablespoons olive oil
- 1 large white onion, finely diced
- 1½ teaspoons turmeric
- 2 pounds frozen petit peas (no need to thaw)
- ½ cup water
- dash sea salt
Method
- In a 5- to 7-quart pressure cooker over medium-high heat, heat the oil
- Add the onion and cook, stirring a few times, until really soft, about 5 minutes; do not brown
- Stir in the turmeric, then add the peas, water, and salt and stir to combine
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 4 minutes
- Remove the pot from the heat and let stand for 10 minutes, no more
- Open the cooker with the Quick Release method
- Be careful of the steam as you remove the lid
- Stir gently and serve immediately
