Ingredients
Makes 8 servings
- ¾ cup creamy peanut butter
- 1/4 cup pure maple syrup
- 1/2 cup light brown sugar
- ¾ cup plain or vanilla soy milk
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- ¾ cup semisweet vegan chocolate chips
Method
- Preheat the oven to 350°F
- Lightly oil a 9-inch round cake pan and set aside
- In a food processor, combine the peanut butter, maple syrup, sugar and soy milk and process until blended
- In a large bowl, combine the flour, baking powder and salt
- Add the flour mixture to the peanut butter mixture and pulse to combine
- Turn the dough out onto a lightly floured work surface and sprinkle with chocolate chips
- Use your hands to fold the chips into the dough, then transfer the dough to the prepared pan, pressing it evenly into the pan
- Bake until golden brown and slightly browned along the edges, about 40 minutes
- Let it cool in the pan for 10 minutes before removing to a wire rack to cool completely, about 45 minutes
