Peanut Butter-Choc Chip Cookie Cake Recipe

Ingredients

Makes 8 servings

  • ¾ cup creamy peanut butter
  • 1/4 cup pure maple syrup
  • 1/2 cup light brown sugar
  • ¾ cup plain or vanilla soy milk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • ¾ cup semisweet vegan chocolate chips

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch round cake pan and set aside
  3. In a food processor, combine the peanut butter, maple syrup, sugar and soy milk and process until blended
  4. In a large bowl, combine the flour, baking powder and salt
  5. Add the flour mixture to the peanut butter mixture and pulse to combine
  6. Turn the dough out onto a lightly floured work surface and sprinkle with chocolate chips
  7. Use your hands to fold the chips into the dough, then transfer the dough to the prepared pan, pressing it evenly into the pan
  8. Bake until golden brown and slightly browned along the edges, about 40 minutes
  9. Let it cool in the pan for 10 minutes before removing to a wire rack to cool completely, about 45 minutes
