Peanut Butter Banana-Stuffed French Toast Recipe

Ingredients

Makes 4 servings

  • 1 ripe banana
  • 1/2 cup creamy peanut butter
  • 1/4 cup light brown sugar
  • 2 teaspoons pure maple syrup
  • 16 slices French bread or 8 slices Italian bread, cut into 1/2-inch slices
  • 1 cup soy milk
  • 3 tablespoons all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons vegan margarine, plus more if needed

Method

  1. In a medium bowl, mash the banana
  2. Add the peanut butter, sugar and maple syrup, stirring to mix well
  3. Preheat the oven to 225°F
  4. Spread 1 to 2 tablespoons of the peanut butter-banana mixture onto half of the bread slices, then top each with one of the remaining bread slices
  5. In a shallow bowl, whisk together the soy milk, flour and vanilla
  6. Place a sandwich in the batter
  7. Let it soak for about 5 seconds
  8. Turn the sandwich over and let it soak another 5 seconds
  9. Repeat with the remaining sandwiches
  10. On a griddle or large skillet, melt the margarine over medium heat
  11. Cook the stuffed bread slices until golden brown on both sides, about 4 minutes per side
  12. Transfer the cooked French toast warm to a heatproof platter and keep warm in the oven while cooking the rest
