Peanut Butter And Jelly Cookies Recipe

Ingredients

  • Serving Size : 42
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1/4 cup butter or margarine – softened
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup peanuts – finely chopped plus some jelly or jam

Method

  1. Mix the sugars, peanut butter, shortening, margarine and egg in a large bowl.
  2. Stir in the flour, baking soda, baking powder and salt.
  3. Cover and refrigerate for about 3 hours, or until firm.
  4. Preheat oven to 375 degrees.
  5. Shape the dough into 1-inch balls.
  6. Roll the balls in the peanuts.
  7. Place about 3 inches apart on ungreased cookie sheets; press thumb in the center of each cookie.
  8. Bake for 10 to 12 minutes, or until set but not hard.
  9. Spoon a small amount of jelly into the thumbprint.
  10. Cool for 2 minutes; remove from the cookie sheets.
  11. Cool on wire racks.
  12. Variation.
  13. Peanut Butter Cookies: Omit the peanuts and jelly.
  14. Shape the dough into 1 1/4-inch balls.
  15. Place about 3 inches apart on ungreased cookie sheets.
  16. Flatten slightly in a crisscross pattern with a fork dipped in flour.
  17. Bake for 9 to 10 minutes, or until light brown.
  18. Cool for 2 minutes; remove from the cookie sheets.
  19. Cool on wire racks.
  20. Makes 3 dozen.
