Ingredients
Makes 8 servings
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 cup vegan margarine, cut into small pieces
- 3 tablespoons cold water, plus more if needed
- 5 ripe peaches, peeled, pitted and sliced
- 1 teaspoon vegan margarine
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
Topping
- ¾ cup old-fashioned oats
- 1/3 cup vegan margarine, softened
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
Method
- Make the crust: In a large bowl, combine the flour, salt and sugar
- Use a pastry blender or fork to cut in the margarine until the mixture resembles coarse crumbs
- Add the water a little at a time and blend until the dough just starts to hold together
- Flatten the dough into a disk and wrap in plastic wrap
- Refrigerate for 30 minutes while you prepare the filling
- Preheat the oven to 425°F
- Roll out the dough on a lightly floured work surface to about 10 inches in diameter
- Fit the dough in a 9-inch pie plate and trim and crimp the edges
- Arrange the peach slices in the crust
- Dot with the margarine and sprinkle with sugar and cinnamon
- Set aside
- Make the topping: In a medium bowl, combine the oats, margarine, sugar, cinnamon and salt
- Mix well and sprinkle on top of the fruit
- Bake until the fruit is bubbly and the crust is golden brown, about 40 minutes
- Remove from oven and cool slightly, 15 to 20 minutes
- Serve warm
