Ingredients
- 2 tbsps (28 ml) olive oil
- 1 cup (160 g) diced onion
- bay leaf
- 1 tsp celery seed
- 1 cup (225 g) green split peas
- ¼ cup (50 g) pearl barley
- ½ cup (101 g) lima beans
- 700 ml water
- 4 L water
- ¼ teaspoon pepper
- ½ teaspoon basil
- ½ teaspoon thyme
- ½ teaspoon caraway seed
- ¼ cup (28 g) grated carrot
- ½ cup (50 g) diced celery
- ½ cup (30 g) fresh parsley
- 1 large potato, diced
Method
- Heat oil in a skillet over medium-high heat and saute onion, bay leaf, and celery seed
- Add to rest of ingredients in slow cooker and stir to combine
- Cook on low about 4 to 6 hours
- Remove bay leaf before serving
- Yield: 6 servings
- Per serving: 488 g water; 257 calories (18% from fat, 18% from protein, 64% from carb)
