Pea Soup Slow Cooker Recipe

Ingredients

  • 2 tbsps (28 ml) olive oil
  • 1 cup (160 g) diced onion
  • bay leaf
  • 1 tsp celery seed
  • 1 cup (225 g) green split peas
  • ¼ cup (50 g) pearl barley
  • ½ cup (101 g) lima beans
  • 700 ml water
  • 4 L water
  • ¼ teaspoon pepper
  • ½ teaspoon basil
  • ½ teaspoon thyme
  • ½ teaspoon caraway seed
  • ¼ cup (28 g) grated carrot
  • ½ cup (50 g) diced celery
  • ½ cup (30 g) fresh parsley
  • 1 large potato, diced

Method

  1. Heat oil in a skillet over medium-high heat and saute onion, bay leaf, and celery seed
  2. Add to rest of ingredients in slow cooker and stir to combine
  3. Cook on low about 4 to 6 hours
  4. Remove bay leaf before serving
  5. Yield: 6 servings
  6. Per serving: 488 g water; 257 calories (18% from fat, 18% from protein, 64% from carb)
