Pbj Muffins Recipe

Ingredients

Makes 12 muffins

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup creamy peanut butter
  • 3 tablespoons vegan margarine
  • 1 cup soy milk
  • 1/4 cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/4 cup seedless raspberry jam or your favorite flavor
  • 1/4 cup finely crushed unsalted roasted peanuts

Method

  1. Preheat the oven to 400°F
  2. Lightly oil a 12-cup muffin tin or line it with paper liners and set aside
  3. In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt
  4. Use a pastry blender or fork to cut in the peanut butter and margarine until the mixture resembles coarse crumbs
  5. Add the soy milk, maple syrup and vanilla and stir until just mixed
  6. Do not overmix
  7. Spoon the batter into the prepared muffin tin
  8. Use a small spoon to make a well in the center of each muffin and spoon 1 teaspoon of jam into the center of each muffin
  9. Sprinkle a light dusting of the crushed peanuts on top of each muffin
  10. Bake for 25 minutes, until golden brown and a toothpick inserted into the center of a muffin comes out clean
  11. Let cool for 5 minutes
  12. Serve warm
