Paradise Pudding Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon vegan margarine
  • 1/4 cup unsalted roasted cashews
  • 1/4 cup golden raisins
  • 1 cup suji (semolina or cream of wheat)
  • 1/2 cup sugar
  • 1 1/2 cups pineapple, mango, or white grape juice
  • 1/4 cup pineapple chunks
  • 1/4 teaspoon ground cardamom

Method

  1. In a medium skillet, heat the margarine over low heat
  2. Add the cashews, raisins and suji and toast until fragrant, stirring frequently, about 5 minutes
  3. Stir in the sugar and pineapple juice and continue to cook, stirring constantly
  4. Add the pineapple chunks and cardamom and continue to cook a few minutes longer, until it resembles a thick pudding
  5. To serve, divide the pudding evenly among 4 small dessert dishes
  6. Serve warm or at room temperature or refrigerate until chilled, about 2 hours
