Ingredients
Makes 4 servings
- 1 tablespoon vegan margarine
- 1/4 cup unsalted roasted cashews
- 1/4 cup golden raisins
- 1 cup suji (semolina or cream of wheat)
- 1/2 cup sugar
- 1 1/2 cups pineapple, mango, or white grape juice
- 1/4 cup pineapple chunks
- 1/4 teaspoon ground cardamom
Method
- In a medium skillet, heat the margarine over low heat
- Add the cashews, raisins and suji and toast until fragrant, stirring frequently, about 5 minutes
- Stir in the sugar and pineapple juice and continue to cook, stirring constantly
- Add the pineapple chunks and cardamom and continue to cook a few minutes longer, until it resembles a thick pudding
- To serve, divide the pudding evenly among 4 small dessert dishes
- Serve warm or at room temperature or refrigerate until chilled, about 2 hours
