Panko-Fried Green Tomatoes With Peanut Sauce Recipe

Ingredients

Makes 4 servings

  • ¾ cup panko
  • 3 or 4 firm green tomatoes, cut into 1/2-inch slices
  • 3 tablespoons canola or grapeseed oil
  • salt and freshly ground black pepper
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lemon or lime juice
  • 1 teaspoon sugar
  • 1/8 teaspoon ground cayenne

Method

  1. Preheat the oven to 250° F
  2. Place the panko in a shallow bowl
  3. Dip the tomato slices in the panko, turning to coat on all sides
  4. In a large skillet, heat the oil over medium heat
  5. Add the tomato slices in one layer, working in batches if necessary
  6. Season each tomato slice with salt and pepper to taste
  7. Cook, turning once, until crisp on both sides, about 8 minutes total
  8. Transfer to a heatproof platter and keep warm in the oven
  9. In a small saucepan, combine the peanut butter, soy sauce, lemon juice, sugar and cayenne, stirring to dissolve the sugar and warm the sauce
  10. Taste, adjusting seasonings if necessary
  11. Add a tablespoon or two of water, if needed, for desired consistency
  12. Drizzle the sauce over the tomato slices and serve immediately
