Ingredients

  • makes 1 cup
  • 3/4 cup green cardamom pods
  • 5 (2-inch) cinnamon sticks or 2 tablespoons ground cinnamon 1/4 cup cloves
  • 2 tablespoons black pepper corns
  • 2 to 3 tablespoons ground ginger
  • 1/2 teaspoon fennel seeds (optional)

Method

  1. Combine all the ingredients in a spice grinder and grind to a powder
  2. Transfer to an airtight container and store for up to 6 months
