Orange-Scented Coconut Cookies Recipe

Ingredients

Makes about 3 dozen cookies

  • 1 cup chopped toasted pecans
  • 1 cup shredded unsweetened coconut
  • 1 cup brown rice flour
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup dates, pitted and chopped
  • 2 tablespoons sweetened dried cranberries
  • 2 teaspoons fresh orange zest
  • 1/2 cup fresh orange juice
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut oil
  • 1 cup orange marmalade

Method

  1. Preheat the oven to 350° F
  2. Lightly oil a baking sheet and set aside
  3. In a large bowl, combine the pecans, coconut, rice flour, cinnamon, nutmeg and salt
  4. Set aside
  5. In a blender or food processor, combine the dates, cranberries, orange zest, orange juice, maple syrup and coconut oil
  6. Blend until smooth
  7. Mix the wet into the dry ingredients until well blended to form a stiff dough
  8. With wet hands, shape the dough into small balls and place them on the prepared baking sheet
  9. Flatten the cookies and make an indentation in the center with your thumb
  10. Fill centers of cookies with a small spoonful of marmalade
  11. Bake the cookies until golden brown, about 10 minutes
  12. Cool for 5 minutes on the baking sheet, then remove the cookies to a wire rack to cool completely
  13. Store in an airtight container
