For the marinade
- 1 teaspoon sesame oil
- 4 teaspoons red miso paste or tahini
- 1 tablespoon rice wine vinegar or rice vinegar
- 1 teaspoon peeled and minced fresh ginger
- juice of 1/2 orange (about 2 tablespoons)
- 1 teaspoon orange zest
- 1 tablespoon coconut sugar
- 11/2 pounds wild salmon, sliced into four fillets
- garnish: sliced green onions, fresh cilantro, orange wedges, 1 tablespoon sesame seeds (optional)
Method
- Preheat the oven to 420°F
- Line a baking sheet with parchment paper
- Combine the sesame oil, miso paste, vinegar, ginger, orange juice, orange zest, and sugar in a large bowl or resealable plastic bag
- Reserve 1/4 cup in a separate bowl
- Pat the salmon fillets dry with a paper towel, then add them to the marinade in the bowl
- Cover and marinate in the fridge for 20 minutes to 1 hour
- Place the fillets on the baking sheet, skin side down
- Bake in the oven for 7 to 9 minutes, then remove from the oven
- Set the oven to broil and drizzle a tablespoon of the reserved marinade over each fillet
- Broil for 2 to 4 minutes, or until the glaze on the top and sides of the fillets caramelizes
