Ingredients
Makes 4 servings
- 1 medium shallot, minced
- 2 teaspoons orange zest
- 1/3 cup fresh orange juice
- 1 tablespoon fresh lemon juice
- pinch sugar
- 2 tablespoons olive oil
- salt and freshly ground black pepper
- 1 pound asparagus, tough ends trimmed
Method
- In a small bowl, combine the shallot, orange zest, orange juice, lemon juice, sugar and oil
- Add salt and pepper to taste and mix well
- Set aside to allow flavors to blend, for 5 to 10 minutes
- Steam the asparagus until just tender, 4 to 5 minutes
- If serving hot, arrange on a serving platter and drizzle the dressing over the asparagus
- Serve at once
- If serving chilled, run the asparagus under cold water to stop the cooking process and retain the color
- Drain on paper towels, then cover and refrigerate until chilled, about 1 hour
- To serve, arrange the asparagus on a serving platter and drizzle with the dressing
