Orange-Date-Walnut Bread Recipe

Ingredients

Makes 1 loaf

  • 1 cup fresh orange juice
  • 1/4 cup pure maple syrup
  • 1 tablespoon finely chopped orange zest
  • 1/2 cup chopped dates
  • 2 tablespoons canola oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch loaf pan and set aside
  3. In a small saucepan, combine the orange juice and maple syrup and bring to a boil
  4. Remove from the heat, add the orange zest, dates and oil and set aside
  5. In a large bowl, combine the flour, baking powder, baking soda and salt
  6. Add the orange juice mixture to the flour mixture, stirring until just combined
  7. Fold in the walnuts, then transfer the batter to the prepared pan
  8. Bake until golden brown and a toothpick inserted in the center comes out clean, about 40 minutes
  9. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely before slicing
