Ingredients
Makes 1 loaf
- 1 cup fresh orange juice
- 1/4 cup pure maple syrup
- 1 tablespoon finely chopped orange zest
- 1/2 cup chopped dates
- 2 tablespoons canola oil
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
Method
- Preheat the oven to 350°F
- Lightly oil a 9-inch loaf pan and set aside
- In a small saucepan, combine the orange juice and maple syrup and bring to a boil
- Remove from the heat, add the orange zest, dates and oil and set aside
- In a large bowl, combine the flour, baking powder, baking soda and salt
- Add the orange juice mixture to the flour mixture, stirring until just combined
- Fold in the walnuts, then transfer the batter to the prepared pan
- Bake until golden brown and a toothpick inserted in the center comes out clean, about 40 minutes
- Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely before slicing
