Orange-Coconut Cake Recipe
Ingredients
Makes 8 to 10 servings
Cake
- 3 cups all-purpose flour
- 1 1/2 cups sugar
- 1 tablespoon baking soda 1 cup unsweetened coconut milk
- ¾ cup canola or other neutral oil
- 1 cup fresh orange juice
- 2 tablespoons fresh lemon juice
- 2 teaspoons pure vanilla extract
- 1 teaspoon coconut extract
Frosting
- 8 ounces vegan cream cheese, softened
- 1/3 cup vegan margarine, softened
- 1/4 cup unsweetened coconut milk
- 2 cups confectioners sugar
- 2 tablespoons orange zest
- 1 teaspoon pure vanilla extract
- 1 teaspoon coconut or orange extract
- 1 cup sweetened shredded coconut
Method
- Make the cake: Preheat the oven to 350°F
- Grease a 9 x 13-inch pan and set aside
- In a large bowl, sift together the flour, sugar and baking soda
- In a separate large bowl, combine the coconut milk, oil, orange juice, lemon juice, vanilla and coconut extract and whisk well to combine
- Quickly whisk the wet ingredients into the dry ingredients to combine
- Pour the batter into the prepared pan
- Bake until a toothpick inserted in the center comes out clean, about 45 minutes
- Let the cake cool completely in the pan on a wire rack, about 1 hour
- Make the frosting: In a medium bowl, combine the cream cheese, margarine and coconut milk and cream together with an electric mixer
- Add 1 cup of the sugar and beat well on low speed to combine
- Add the coconut extract, orange zest, vanilla and remaining 1 cup sugar and continue to beat until the mixture is light and fluffy
- Spread the frosting on the cooled cake and sprinkle with shredded coconut
