Orange Cranberry Cake
Ingredients
Servings : 4-6 dishes.
- 1 1/2 cup all purpose flour
- 1 teaspoon baking powder
- 1 tablespoon orange zest
- 1 cup sugar
- 1 cup coconut milk
- 1/2 cup fresh cranberries
- 1 pinch of salt
Method
- In a bowl, mix the sugar with the salt, milk and orange zest
- Stir in the flour and baking powder then fold in the cranberries
- Pour this batter into a small cake pan greased with oil
- Bake in a preheated oven at 350F for 30 minutes or until golden brown or fragrant
