Orange And Maple-Baked Acorn Squash Recipe

Ingredients

Makes 4 servings

  • 1 medium acorn squash
  • 1/2 cup fresh orange juice
  • 3 tablespoons pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • salt and freshly ground black pepper

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9 x 13-inch baking pan and set aside
  3. Cut the squash crosswise into half-inch rings and remove seeds
  4. Arrange the squash rings in the prepared baking pan and sprinkle with orange juice, maple syrup, cinnamon and salt and pepper to taste
  5. Cover tightly with foil and bake until tender, about 45 minutes
  6. Serve immediately
