Omelet Of Mallorquin Sausage And Mahon Cheese Spanish Recipe

Ingredients

  • 8 large eggs
  • 4 ounces mahon (Spanish cow’s-milk cheese from Menorca), diced
  • sea salt to taste
  • 4 1-ounce slices of sobrasada sausage
  • 4 teaspoons Spanish extra-virgin olive oil

Method

  1. Break 2 eggs into a mixing bowl and whisk them vigorously
  2. Stir in one-quarter of the cheese and season to taste with salt
  3. Heat a 6-inch saute pan over medium heat
  4. Once the pan is hot, lay 1 slice of the sobrasada in the pan and cook for 2 minutes on each side, then set aside on a warm plate
  5. Quickly wipe the saute pan with a paper towel and return it to the stovetop on medium heat
  6. Lay the browned slice of sobrasada in the center of the pan and pour the whisked eggs and cheese over the sausage
  7. Run a spatula around the edge of the eggs and shake the pan vigorously for 10 to 15 seconds to prevent the tortilla from sticking
  8. Flip the tortilla when the edges are cooked but the center has not set
  9. Place a plate over the pan and invert the pan and plate together so the tortilla ends up on the plate, uncooked side down
  10. Add 1 teaspoon of the olive oil to the pan and slide the tortilla back into the pan, uncooked side down
  11. Continue cooking for another 30 seconds
  12. Transfer the tortilla to a serving plate and keep warm
  13. Repeat with the remaining ingredients to form 3 more tortillas
  14. Serve immediately
