Ingredients

- 3/4 cup sweet cream butter – softened
- 1 cup sugar
- 4 Eggs
- 1 cup peach jam
- 1 teaspoon lemon extract
- 2 1/2 cups unsifted all-purpose flour
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon allspice
- 1 cup buttermilk
- 1 cup currants – dredged in flour
Method
- Preheat oven to 350 degrees.
- Grease three 8″ round cake pans.
- In large mixer bowl cream butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Blend in jam and lemon extract.
- Mix together flour, soda, cinnamon, baking powder and allspice.
- Add dry ingredients alternately with buttermilk.
- Fold in currants.
- Turn into pans.
- Bake at 350 degrees for 25 to 30 minutes until toothpick inserted in center comes out clean.
- Cool 5 minutes; remove from pan.
- Cool completely.
- Spread Cream Cheese Butter Icing between layers and on top of cake.
