Ingredients
Makes 1 loaf
- 1 1/4 cups boiling water
- 1/2 cup old-fashioned oats
- 2 tablespoons vegan margarine
- 1 1/4 teaspoons salt
- 1/4 cup pure maple syrup
- 1 package active dry yeast (21/4 teaspoons)
- 31/4 cups all-purpose flour or bread flour
- 1/2 cup finely chopped walnuts
Method
- In a large bowl, combine the boiling water, oats, margarine, salt and maple syrup
- Stir to combine, then set aside to cool to lukewarm
- Add the yeast, then stir in the flour and walnuts and knead until smooth, about 5 minutes
- Place the dough in a lightly oiled bowl, turning the dough to coat with oil
- Cover with plastic wrap or clean dish towel and let rise in a warm place until doubled, about 1 hour
- Test dough by poking it with your finger
- Its ready if the indentation from your finger remains
- Lightly oil a 9-inch loaf pan
- Punch the dough down, then shape it into a loaf and place it in the prepared pan
- Cover the pan with plastic wrap or clean dish towel and let rise again for 45 minutes
- Preheat the oven to 375°F
- Uncover and bake the bread until golden brown, 35 to 40 minutes
- Cover loosely with foil if it begins to brown too quickly
- After cooling in the pan for 5 minutes, remove the loaf from the pan and cool it on a wire rack for 30 minutes before slicing
