Ingredients
Makes : 3 dozen
- 1 cup almond butter, softened
- 2/3 cup sugar
- 2 tablespoons flax seeds, ground
- 4 tablespoons water
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 2/3 cups all purpose flour
- 1/2 cup rolled oats
- 1/2 cup chocolate chips
- 1 pinch of salt
Method
- In a small bowl, combine the ground flax seeds with water and set aside to soak
- In another bowl, mix the sugar with the butter until creamy and fluffy
- Stir in the flax seeds then vanilla
- Add the flour, rolled oats, baking soda and baking powder, as well as a pinch of salt, and give it a good mix
- Fold in the chocolate chips
- Drop spoonfuls of batter into the prepared baking pans and bake in a preheated oven at 350F for 15-20 minutes
- Store in an airtight container for up to 2 weeks
