Ingredients
- 5 teaspoons spanish extra-virgin olive oil
- 8 (2-ounce) whole cigalas (norway lobsters), split in half lengthwise
- juice of ¼ lemon (about 1 teaspoon)
- coarse sea salt to taste
- ½ teaspoon grated lemon zest
Method
- On a flat griddle or in a medium frying pan, heat 1 teaspoon of the oil over medium-high heat
- Place half the split lobsters on the griddle, shell side down, and cook without moving them for 3 minutes
- Transfer the grilled lobsters to a warm serving platter and repeat with the remaining lobsters, adding another teaspoon of oil to the griddle
- Whisk together the remaining 3 teaspoons olive oil and the lemon juice
- Spoon the dressing over the lobsters and sprinkle with salt and lemon zest
