Norway Lobster Cooked On A Griddle Spanish Recipe

Ingredients

  • 5 teaspoons spanish extra-virgin olive oil
  • 8 (2-ounce) whole cigalas (norway lobsters), split in half lengthwise
  • juice of ¼ lemon (about 1 teaspoon)
  • coarse sea salt to taste
  • ½ teaspoon grated lemon zest

Method

  1. On a flat griddle or in a medium frying pan, heat 1 teaspoon of the oil over medium-high heat
  2. Place half the split lobsters on the griddle, shell side down, and cook without moving them for 3 minutes
  3. Transfer the grilled lobsters to a warm serving platter and repeat with the remaining lobsters, adding another teaspoon of oil to the griddle
  4. Whisk together the remaining 3 teaspoons olive oil and the lemon juice
  5. Spoon the dressing over the lobsters and sprinkle with salt and lemon zest
