Ingredients
- 1½ cups (355 ml) low-salt chicken broth
- ½ cup 50 g thinly sliced celery
- 1 cup (160 g) thinly sliced onions
- ½ cup (75 g) sliced red bell pepper
- ½ cup (75 g) sliced green bell pepper
- ½ cup (130 g) chunky peanut butter
- chicken thighs, skinned
- ¼ teaspoon red pepper flakes
Method
- Combine broth, celery, onions, and peppers in slow cooker
- Spread peanut butter over both sides of chicken pieces
- Sprinkle with red pepper flakes
- Place on top of vegetables in slow cooker
- Cover and cook on low 5 to 6 hours
- Yield: 4 servings
- Per serving: 233 g water; 331 calories (53% from fat, 31% from protein, 16% from carb)
