Ingredients
Makes 8 servings
- 1 1/2 cups vegan oatmeal cookie crumbs
- 1/4 cup vegan margarine
- 1 pound firm tofu, well drained and pressed
- ¾ cup sugar
- 1 teaspoon pure vanilla extract
- 1 ripe peach, pitted and cut into 1/4-inch slices
- 2 ripe plums, pitted and cut into 1/4-inch slices
- 1/4 cup peach preserves
- 1 teaspoon fresh lemon juice
Method
- Grease a 9-inch pie plate and set aside
- In a food processor, combine the crumbs and the melted margarine and process until the crumbs are moistened
- Press the crumb mixture into the prepared pie plate
- Refrigerate until needed
- In the food processor, combine the tofu, sugar and vanilla and process until smooth
- Spread the tofu mixture into the chilled crust and refrigerate for 1 hour
- Arrange the fruit decoratively on top of the tofu mixture
- Set aside
- In a small heatproof bowl, combine the preserves and lemon juice and microwave until melted, about 5 seconds
- Stir and drizzle over the fruit
- Refrigerate the pie for at least 1 hour before serving to chill the filling and set the glaze
