No-Bake Fresh Fruit Pie Recipe

Ingredients

Makes 8 servings

  • 1 1/2 cups vegan oatmeal cookie crumbs
  • 1/4 cup vegan margarine
  • 1 pound firm tofu, well drained and pressed
  • ¾ cup sugar
  • 1 teaspoon pure vanilla extract
  • 1 ripe peach, pitted and cut into 1/4-inch slices
  • 2 ripe plums, pitted and cut into 1/4-inch slices
  • 1/4 cup peach preserves
  • 1 teaspoon fresh lemon juice

Method

  1. Grease a 9-inch pie plate and set aside
  2. In a food processor, combine the crumbs and the melted margarine and process until the crumbs are moistened
  3. Press the crumb mixture into the prepared pie plate
  4. Refrigerate until needed
  5. In the food processor, combine the tofu, sugar and vanilla and process until smooth
  6. Spread the tofu mixture into the chilled crust and refrigerate for 1 hour
  7. Arrange the fruit decoratively on top of the tofu mixture
  8. Set aside
  9. In a small heatproof bowl, combine the preserves and lemon juice and microwave until melted, about 5 seconds
  10. Stir and drizzle over the fruit
  11. Refrigerate the pie for at least 1 hour before serving to chill the filling and set the glaze
