Ingredients
SERVES 6 – Cooker: 5- to 7-quart – Time: 8 minutes at HIGH pressure
- 1/3 cup light or dark molasses (but not blackstrap)
- 1/3 cup ketchup
- 1/3 cup firmly packed brown sugar
- 1 tablespoon Dijon mustard
- 3 cups water
- 1 medium white onion, finely chopped
- 2 cups dried navy beans, soaked and drained
- 8 ounces ham, diced
- sea salt and freshly ground black pepper
Method
- In a 5 to 7-quart pressure cooker, combine the molasses, ketchup, brown sugar, mustard, and water
- Stir to dissolve the sugar and molasses
- Add the onion, drained soaked beans, and ham
- Stir to evenly coat the beans with the mixture
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 8 minutes
- Remove the pot from the heat
- Open the cooker with the Natural Release method; let stand for 15 minutes
- Be careful of the steam as you remove the lid
- Season with salt and pepper to taste
- Keeps in an airtight container in the refrigerator up to 4 days and in the freezer up to 3 months
