Neapolitan Spaghetti Sauce Recipe

Ingredients

  • Serving Size : 6
  • 2 onions – sliced thin
  • 1 can tomato paste – Italian
  • 2 garlic cloves – mashed
  • 4 chili peppers
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1 1/2 pound ground beef
  • 1/4 teaspoon pepper
  • 2 1/2 cup tomato juice
  • 1 teaspoon sugar
  • 1 1/2 cup tomato puree
  • 12 green olives; stuffed – slice

Method

  1. Brown onions and garlic in oil.
  2. Add meat and brown slowly.
  3. Heat tomato juice, puree and paste in a deep kettle; add meat mixture, chili peppers; salt, pepper and sugar.
  4. Simmer 2-1/2 to 3 hours, until thick.
  5. Remove chili peppers and add olives.
  6. Simmer 10 minute longer.
  7. Serve with spaghetti, topped with grated Parmesan cheese.
  8. Makes sauce for 1 pound spaghetti.
