Mushrooms And Greens Indian Recipe

Ingredients

  • recipe for : Kadhai Kumbh Palak
  • 1 teaspoon safflower or other neutral oil
  • 4 cloves garlic, minced or 2 tablespoons garlic paste
  • 1/2 teaspoon Garam Masala
  • 1/2 teaspoon ground coriander
  • 1/2 to 1 green chile, chopped (remove seeds to reduce heat) 1/4 cup chopped cilantro
  • 1/2 teaspoon dried fenugreek leaves or 1/4 cup chopped fresh fenugeek leaves
  • 1/4 to 1/2 teaspoon red pepper flakes
  • 3 medium tomatoes, chopped (2 1/4 cups)
  • 4 ounces button or baby bella mushrooms, sliced (1 1/2 to 2 cups)
  • 2 cups packed baby greens, such as baby spinach, chard, or kale
  • 2 tablespoons or more water
  • 1/2 teaspoon salt
  • 2 tablespoons chopped cilantro, for garnish

Method

  1. Heat the oil in a large skillet over medium high heat
  2. Add the garlic, garam masala, and coriander
  3. Stir frequently and cook until the garlic becomes fragrant and golden, 2 minutes
  4. Add the green chile, cilantro, fenugreek, and red pepper flakes
  5. Mix well and cook for 1 minute
  6. Add the tomatoes, mix well, and cook until they are saucy and shimmery, 5 to 6 minutes, stirring occasionally
  7. Add the mushrooms, greens, 2 tablespoons water, and salt
  8. Mix well and cook until the mushrooms are tender, 5 to 7 minutes
  9. You can also reduce the heat to medium and cook longer for well-cooked mushrooms
  10. Serve hot, garnished with cilantro, along with flatbread or rice
