Ingredients
SERVES 6 to 8 – Cooker: 5- to 7-quart – Time: 6 minutes at HIGH pressure
- 1½ cups mixed grains and legumes
- 2 cups white short-grain Japanese-style rice, rinsed
- 1½ tablespoons olive oil or plain sesame oil
- 1 or 2 (3-finger) pinch(es) sea salt or Himalayan pink salt
- 4 cups spring or filtered water
Method
- Rinse the mixed grains several times until the water runs clear and soak them in water to cover for 30 minutes to 1 hour
- Drain
- Combine the soaked mixed grains and legumes, rice, oil, salt, and water in a 5 to 7-quart pressure cooker that has been sprayed with nonstick cooking spray
- Close and lock the lid
- Place a heat diffuser on the burner and the pressure cooker on the diffuser
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 6 minutes
- Remove the pot from the heat
- Open the cooker with the Natural Release method; let stand for 15 minutes
- Be careful of the steam as you remove the lid
- Gently stir to fluff and combine the grains and legumes and serve
