Sugar-Free Cinnamon Rolls

Ingredients

  • 1 tbsp. yeast
  • 1 3/4 cups lukewarm water
  • 1 cup softened butter
  • 4 eggs
  • 1/4 cup warm water
  • 8 cups flour
  • 1 cup fructose
  • 1 tsp
  • salt
  • raisins (optional)

Method

  1. Melted butter, cinnamon and fructose as needed
  2. Dissolve yeast in lukewarm water
  3. Add milk and 1 cup of flour and let rise, covered, in a warm place
  4. Combine butter and fructose
  5. Add eggs, one at a time, then add raisins, if using them
  6. Mix well, knead until smooth
  7. Let rise until doubled
  8. Roll dough into rectangle 9 in wide and 1/4 in thick
  9. Brush with melted butter
  10. Sprinkle liberally with cinnamon and fructose
  11. Roll into log shape
  12. Cut into 3/4 to 1 in pieces
  13. Place in pan
  14. Brush tops with butter
  15. Sprinkle liberally with fructose and cinnamon
  16. Let rise until double in size
  17. Preheat oven to 375F
  18. Bake for about 25 minutes

Icing for Cinnamon rolls:

  1. Mix powdered fructose and butter until well blended
  2. It should be smooth
  3. Spread on cinnamon rolls while they are warm but not hot
