Ingredients
Makes about 3 dozen cookies
- 1/4 cup vegan margarine
- ¾ cup sugar
- 1/2 cup dark molasses
- 2 tablespoons water, plus more if needed
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon salt
Method
- In a large bowl, cream together the margarine with the sugar until light and fluffy
- Mix in the molasses and water
- Set aside
- In a medium bowl, combine the flour, baking soda, ginger, cinnamon, allspice and salt
- Gradually add the dry ingredients to the wet ingredients, adding a small amount of additional water if needed to form a stiff dough
- On a lightly floured work surface, roll the dough into a log about 2 inches in diameter
- Wrap in plastic wrap and chill the dough for 1 hour or longer
- Preheat the oven to 350°F
- Cut the dough into thin slices about 1/4 inch thick and arrange on an ungreased baking sheet
- Bake until the edges are browned, about 8 minutes
- Cool for 5 minutes on the baking sheet before removing to a wire rack to cool completely
- Store in an airtight container
