Mixed Squash Casserole Slow Cooker Recipe

Ingredients

  • 1½ cups (180 g) sliced zucchini
  • 1½ cups (180 g) sliced yellow squash
  • 1 cup (180 g) peeled and chopped tomatoes
  • ¼ cup (25 g) sliced scallions
  • ½ cup (75 g) chopped green bell pepper
  • ¼ cup (60 ml) low-salt chicken broth
  • ¼ cup (30 g) bread crumbs

Method

  1. In slow cooker, layer half the zucchini, squash, tomatoes, scallions, and green pepper
  2. Repeat layers
  3. Pour broth over vegetables
  4. Sprinkle bread crumbs over top
  5. Cover and cook on low 4 to 6 hours
  6. Yield: 8 servings
  7. Per serving: 79 g water; 28 calories (11% from fat, 17% from protein, 72% from carb)
