Ingredients
Makes 4 servings
- 2 1/2 tablespoons Japanese yuzu vinegar
- 1 tablespoon minced shallot
- 1/2 teaspoon agave nectar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup olive oil
- 5 cups mixed lettuce leaves (torn or chopped if large)
- 3 small white radishes, cut into 1/8-inch slices
- 12 snow peas, trimmed, blanched and cut diagonally into thirds
Method
- In a small bowl, combine the vinegar, shallot, agave nectar, salt and pepper
- Whisk in the oil and taste, adjusting seasonings if necessary
- In a large bowl, combine the lettuce, radishes and snow peas
- Add enough dressing to lightly coat
- Toss gently to combine and serve
