For the citrus mint syrup
- juice of 2 oranges
- 1/2 cup water
- 1/4 cup coconut sugar
- 5 fresh mint leaves, chopped
- 1 teaspoon vanilla extract (optional)
- 1/4 teaspoon (1 g) stevia in the raw (for extra sweetness) (optional)
For the salad
- 3 cups fresh berries such as blueberries, strawberries (halved), or blackberries (mix and match your favorites)
Method
- In a bowl, combine the orange juice, water, sugar, mint leaves, vanilla extract (if using), and stevia (if using)
- Place a nonstick skillet over medium-low heat, pour in the syrup ingredients, and bring to a simmer
- Cook for 5 to 7 minutes, or until the liquid reduces by half, then remove it from the heat to allow it to thicken and cool to room temperature
- Pour the syrup into an airtight jar and place in the fridge to chill for at least 1 hour
- I like to keep the pieces of chopped mint in the syrup while it chills to infuse it with more mint flavor; however, you can remove them if you’d like
- Toss the berries together in a bowl, then pour the syrup over the berries
- Fold the berries into the syrup, then chill for 1 hour before serving
- Store the berries in an airtight container in the fridge for up to 5 days
- Repeat
- If you are not going to eat the salad within 5 days, divide the salad and syrup into individual portions in an ice cube tray and freeze
- Add the ice fruit cubes to your smoothies for a boost of flavor
