Ingredients
- 2 Cups Chopped Onion
- ½ Cup Pitted Kalamata Olives
- ½ Cup Julienne-cut Sun Dried Tomatoes
- 2 tbsp Fresh Lemon Juice
- 3 Cloves Garlic, minced
- 1 tsp McCormick’s Mediterranean Seasoning
- ¼ tsp Freshly Ground Black pepper
- 2½ lbs of Boneless Chicken Breasts
- ¼ cup of Low Sodium Chicken Stock
Method
- Heat a skillet and brown the chicken breasts on both sides
- Insert the browned meat into a crock pot
- Toss in the rest of the ingredients, cover the crock pot and cook for about 6 hours
- Once the meat is tender, remove from the crock pot and serve warm with brown rice
