Ingredients
- 1 pound (900 g) meatballs, basic or turkey
- 6 medium potatoes, cubed
- 1 cup (160 g) sliced onion
- 1½ cups (195 g) sliced carrots
- 1 cup (240 g) low-salt ketchup
- 1 cup (235 ml) water
- 2 tbsps (28 ml) vinegar
- 1 tsp basil
- 1 tsp oregano
- ¼ teaspoon pepper
Method
- Brown meatballs in skillet over medium heat
- Drain
- Place potatoes, onion, and carrots in slow cooker
- Top with meatballs
- Combine ketchup, water, vinegar, basil, oregano, and pepper
- Pour over meatballs
- Cover and cook on high 4 to 5 hours or until vegetables are tender
- Yield: 8 servings
- Per serving: 381 g water; 485 calories (29% from fat, 20% from protein, 51% from carb)
