Ingredients
Makes 4 servings
- 2 tablespoons vegan margarine
- 1 pound carrots, cut diagonally into 1/4-inch slices
- 1 tablespoon sugar
- salt and freshly ground black pepper
- 1/2 cup Marsala
- 1/4 cup water
- 1/4 cup chopped fresh parsley, for garnish
Method
- In a large skillet, melt the margarine over medium heat
- Add the carrots and toss well to coat evenly with the margarine
- Cover and cook, stirring occasionally, for 5 minutes
- Sprinkle the sugar over the carrots and season with salt and pepper to taste, tossing to coat
- Add the Marsala and water
- Reduce heat to low, cover and simmer until the carrots are tender, about 15 minutes
- Uncover and cook over medium-high heat until the liquid is reduced into a syrupy sauce, stirring to prevent burning
- Transfer to a serving bowl and sprinkle with parsley
- Serve immediately
