Maple Cranberry Cheesecake Recipe

Ingredients

CRUST:

  • 2 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 3 tablespoons sugar
  • 1/2 teaspoon ground cinnamon

FILLING:

  • 1 1/2 cups maple syrup
  • 3 packages (8 ounces each) cream cheese, softened
  • 1/2 cup packed brown sugar
  • 2/3 cup sour cream
  • 3 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 4 eggs, lightly beaten

COMPOTE:

  • 2 cups fresh cranberries
  • 2/3 cup dried cranberries
  • 1 cup maple syrup
  • 1/2 cup packed brown sugar

Method

  1. Preheat oven to 375F
  2. In a large bowl, combine graham cracker crumbs, sugar, cinnamon and butter
  3. Press into the bottom and 1 ½ inches up the sides of a greased 9 inch springform pan
  4. Bake for 8 minutes
  5. Reduce heat to 325F
  6. Bring maple syrup to a boil in a small saucepan until reduced to about 1 cup
  7. Set aside
  8. In a large mixing bowl, beat cream cheese and brown sugar until smooth
  9. Add in sour cream, flour, vanilla, salt and maple syrup
  10. Beat in eggs until just combined
  11. Pour into crust
  12. Place pan in a baking pan filled with 1 inch of water
  13. Bake for 80 to 90 minutes, until center is just set
  14. Cool, cover and chill overnight
  15. In a large saucepan combine all compote ingredients over medium heat until the cranberries begin to pop, about 10 minutes
  16. Serve warm with cheesecake
