Ingredients
CRUST:
- 2 cups graham cracker crumbs
- 1/3 cup butter, melted
- 3 tablespoons sugar
- 1/2 teaspoon ground cinnamon
FILLING:
- 1 1/2 cups maple syrup
- 3 packages (8 ounces each) cream cheese, softened
- 1/2 cup packed brown sugar
- 2/3 cup sour cream
- 3 tablespoons all-purpose flour
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 4 eggs, lightly beaten
COMPOTE:
- 2 cups fresh cranberries
- 2/3 cup dried cranberries
- 1 cup maple syrup
- 1/2 cup packed brown sugar
Method
- Preheat oven to 375F
- In a large bowl, combine graham cracker crumbs, sugar, cinnamon and butter
- Press into the bottom and 1 ½ inches up the sides of a greased 9 inch springform pan
- Bake for 8 minutes
- Reduce heat to 325F
- Bring maple syrup to a boil in a small saucepan until reduced to about 1 cup
- Set aside
- In a large mixing bowl, beat cream cheese and brown sugar until smooth
- Add in sour cream, flour, vanilla, salt and maple syrup
- Beat in eggs until just combined
- Pour into crust
- Place pan in a baking pan filled with 1 inch of water
- Bake for 80 to 90 minutes, until center is just set
- Cool, cover and chill overnight
- In a large saucepan combine all compote ingredients over medium heat until the cranberries begin to pop, about 10 minutes
- Serve warm with cheesecake
