Mango Morning Quesadillas Recipe

Ingredients

Makes 4 servings

  • 8 ounces firm tofu, drained and crumbled
  • 1/4 cup agave nectar
  • 1/2 teaspoon ground coriander
  • 2 ripe mangos, peeled, pitted and chopped
  • 8 (6-inch) soft flour tortillas

Method

  1. In a blender or food processor, combine the tofu, agave nectar and coriander
  2. Process until smooth
  3. Add the mango and pulse to combine
  4. Set aside
  5. Preheat the oven to 425°F
  6. Lightly oil a large baking sheet
  7. Arrange 4 of the tortillas in a single layer on the prepared baking sheet
  8. Spread the tofu mixture evenly over the tortillas, covering the tortillas to within 1/2 inch of the edge
  9. Top with the remaining tortillas, pressing gently
  10. Bake until the tortillas are lightly browned, about 7 minutes
  11. Transfer the quesadillas to a cutting board
  12. Cut them into wedges and serve
