Ingredients
Makes 4 servings
- 8 ounces firm tofu, drained and crumbled
- 1/4 cup agave nectar
- 1/2 teaspoon ground coriander
- 2 ripe mangos, peeled, pitted and chopped
- 8 (6-inch) soft flour tortillas
Method
- In a blender or food processor, combine the tofu, agave nectar and coriander
- Process until smooth
- Add the mango and pulse to combine
- Set aside
- Preheat the oven to 425°F
- Lightly oil a large baking sheet
- Arrange 4 of the tortillas in a single layer on the prepared baking sheet
- Spread the tofu mixture evenly over the tortillas, covering the tortillas to within 1/2 inch of the edge
- Top with the remaining tortillas, pressing gently
- Bake until the tortillas are lightly browned, about 7 minutes
- Transfer the quesadillas to a cutting board
- Cut them into wedges and serve
