Mango Lassi Recipe

Ingredients

Makes 2 servings

  • 2 fresh ripe mangos, peeled and pitted
  • 1 1/2 cups vegan vanilla or coconut yogurt
  • 1/2 cup chilled plain or vanilla soy milk or other nondairy milk
  • 4 ice cubes
  • ground cardamom, for garnish (optional)

Method

  1. In a blender, combine the mangos and yogurt in a blender and blend until smooth
  2. Add the soy milk and ice cubes and blend until smooth and creamy
  3. Pour into glasses and sprinkle with cardamom, if using
  4. Serve immediately
