Manchego With Tomato Thyme And Walnuts Spanish Recipe

Ingredients

  • ¼ cup whole walnuts
  • 2 ripe plum tomatoes
  • 2 tablespoons Spanish extra-virgin olive oil
  • sea salt and freshly cracked black pepper to taste
  • 2 fresh rosemary sprigs
  • 8 ounces manchego (Spanish sheep’s-milk cheese), cut into ½-inch cubes

Method

  1. Preheat the oven to 350°F
  2. Spread the walnuts on a baking sheet
  3. Toast them in the oven for 5 minutes
  4. Slice the tomatoes in half
  5. Place a grater over a mixing bowl
  6. Rub the cut surface of the tomatoes over the grater until all of the flesh is grated
  7. Discard the skins
  8. Add the olive oil and walnuts to the tomato pulp
  9. Stir and season to taste with salt and pepper
  10. Strip the leaves from the rosemary sprigs and add to the tomato mixture, then toss in the cheese
  11. To serve, spoon some of the mixture onto a serving plate and spear the cheese cubes with toothpicks
