Manchego With Tomato Thyme And Walnuts Spanish Recipe
Ingredients
- ¼ cup whole walnuts
- 2 ripe plum tomatoes
- 2 tablespoons Spanish extra-virgin olive oil
- sea salt and freshly cracked black pepper to taste
- 2 fresh rosemary sprigs
- 8 ounces manchego (Spanish sheep’s-milk cheese), cut into ½-inch cubes
Method
- Preheat the oven to 350°F
- Spread the walnuts on a baking sheet
- Toast them in the oven for 5 minutes
- Slice the tomatoes in half
- Place a grater over a mixing bowl
- Rub the cut surface of the tomatoes over the grater until all of the flesh is grated
- Discard the skins
- Add the olive oil and walnuts to the tomato pulp
- Stir and season to taste with salt and pepper
- Strip the leaves from the rosemary sprigs and add to the tomato mixture, then toss in the cheese
- To serve, spoon some of the mixture onto a serving plate and spear the cheese cubes with toothpicks
