Macaroni Cheese With Turkey Bacon Recipe

Ingredients

  • 4 slices natural turkey bacon, uncured and nitrate free
  • olive oil spray
  • 12 ounces whole wheat macaroni

For the sauce

  • 4 ounces (1 heaped cup) shredded reduced-fat mozzarella cheese
  • 4 ounces goat cheese, crumbled
  • 1/3 cup plus 1 heaped tablespoon 2% Greek yogurt
  • 1/2 teaspoon ground cumin (use 1 teaspoon for a more potent flavor)
  • garnish: sliced fresh chives or fresh parsley, cracked black pepper, red pepper flakes

Method

  1. Set a nonstick skillet over medium heat and add the bacon
  2. Spray it lightly with olive oil as it cooks so that it gets crispy
  3. Cool and crumble into pieces
  4. Cook the macaroni in a pot according to the instructions on the package
  5. Drain the macaroni, reserving 1/4 cup of the cooking water
  6. Add the macaroni and cooling water back to the pot, then slowly fold in the mozzarella and goat cheeses
  7. Continuously mix and fold in the pasta until the cheese has melted
  8. Add the yogurt and cumin, and fold everything together
  9. Add the bacon crumbles to the macaroni and mix one final time
  10. Season to taste with sea salt and pepper, garnish, and enjoy immediately while it’s still hot!
