Maasis Nepali Potatoes Indian Recipe

Ingredients

  • recipe for : Nepali Aloo
  • 1 tablespoon safflower or other oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 8 cloves garlic, thinly sliced
  • 1 (3-inch) knob of ginger, julienne
  • 3 green chiles, thinly sliced (remove seeds to reduce heat) 1/2 teaspoon ground turmeric
  • 2 to 3 teaspoons white vinegar or apple cider vinegar
  • 3 1/2 cups precooked potato wedges (4 medium potatoes)
  • 3/4 to 1 teaspoon salt

Method

  1. Heat the oil in a large skillet over medium heat
  2. When hot, add the mustard seeds and cumin seeds
  3. Cook until they start to pop, about 1 minute
  4. Add the garlic, ginger, and chile and cook until the garlic is golden, 2 minutes
  5. Reduce heat to low
  6. Stir in the turmeric and vinegar
  7. Add the cooked potatoes and salt and mix well
  8. Cover and cook for 5 minutes
  9. Serve hot
