Lower-Carb Spaghetti And Meatballs Recipe

Ingredients

  • 1 medium (about 3 pounds) spaghetti squash
  • olive oil spray
  • pinch of black pepper

For the meatballs

  • 1 pound 93% lean ground turkey
  • 1 egg, lightly beaten
  • 1 tablespoon minced garlic
  • 1/3 cup grated parmesan cheese
  • 1 teaspoon ground dried sage
  • 1/3 cup finely chopped green onion
  • 2 cups puttanesca sauce or reduced-calorie marinara sauce
  • garnish: finely chopped fresh parsley, red pepper flakes

Method

  1. Preheat the oven to 420°F
  2. Line a baking sheet with parchment paper
  3. Slice the squash horizontally to create 1/2-inch rings
  4. Remove the seeds from the inside of each ring, then place the rings on the baking sheet
  5. Spray the rings with olive oil, then sprinkle with pepper
  6. Bake until soft, 45 to 50 minutes, turning halfway through
  7. Allow the rings to cool before handling
  8. Gently push the inside of each ring to remove the spaghetti strands from the rind, then carefully pull the spaghetti apart
  9. Place the spaghetti in a large bowl and set aside
  10. While the squash is baking, mix together the meatball ingredients
  11. Form eighteen 11/4-ounce meatballs and spread them out on a baking sheet lined with parchment paper
  12. You can also bake them in a mini muffin pan
  13. Bake until the internal temperature is 165°F, the outside is golden brown, and the juices run clear, 12 to 15 minutes
  14. Remove the meatballs from the oven
  15. Add the meatballs to the spaghetti squash, then drizzle the puttanesca sauce on top
  16. Garnish and enjoy
