Low-Fat Sweet-Potato Biscuits Recipe

Ingredients

  • 1 tablespoon shortening
  • 1 cup flour
  • 2 teaspoons baking powder
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 1/4 cup cooked, mashed Sweet-Potato
  • 1/4 cup milk (1/4 to 1/3)
  • Method

  • Preheat oven to 400 degrees.
  • Grease baking sheets or line with parchment paper.
  • Sift together flour, baking powder, sugar, and salt; cut in shortening with a pastry blender or fork, until mixture resembles coarse meal.
  • Stir in Sweet-Potato and milk, mixing just until all dry ingredients are moistened.
  • Drop remaining dough by spoonfuls onto baking sheet; or, roll out 1/2-inch thick and cut with a biscuit cutter.
  • Bake 12 to 15 minutes, until light brown.
  • Makes six to eight.
