Low Fat Raspberry-Peppercorn Dressing Recipe

Ingredients

  • 1 tablespoon sugar
  • 2 teaspoons cornstarch
  • 1/8 teaspoon salt
  • 2/3 cup water
  • 1/3 cup raspberry vinegar
  • 1 tablespoon chopped fresh cilantro
  • 1 to
  • 2 teaspoons green peppercorns in
  • water, drained*
  • *Substitute
  • 1/2 teaspoon coarsely ground black
  • pepper.
  • Method

  • Mix sugar, cornstarch and salt in 1-quart saucepan.
  • Gradually stir in water and vinegar.
  • Cook over medium heat, stirring constantly, until mixture thickens and boils.
  • Boil and stir 1 minute; remove from heat.
  • Stir in cilantro and peppercorns.
  • Cover and refrigerate any remaining dressing.
  • ABOUT 1 CUP DRESSING.
